This weekend saw the birth of our first two brews, with Old Fecker having been produced on Saturday and Ribble Rouser on Sunday. It was a steep learning curve for us all, with the plant and equipment throwing up some un-foreseen challenges, but nothing that we couldn't overcome with a little ingenuity.
As we go to press Old Fecker has reached the desired Specific gravity and we stopped the fermentation process yesterday evening. Ribble Rouser is currently being flash chilled to stop fermenting and we expect to be casking the ales this weekend. Following that, we will be conditioning in the casks for a further week and so from March 1st we will be in a position to accept and fulfill orders for the beers.
Thanks to all the folks who have given their support and encouragement over the last nine months, it is really appreciated. We trust you will agree it has been worth the wait and enjoy our beers.
